In traditional Italian gelato culture, patience, good raw materials, and craftsmanship are very important. We preserve this understanding while adapting it to the expectations of today's consumers. People are no longer looking for just a delicious product; they are looking for an experience where they know the ingredients, trust the product, and find it aesthetically pleasing. Lu Gelato's current approach is shaped precisely at this point. The strongest link we inherited from the past is a respect for quality and simplicity. We carry this into the present with modern recipes, a strong store experience, and a contemporary brand language.


You define each of your branches as an experience point. Lu Gelato offers not only flavor but also a lifestyle with its visual identity, pastel tones, and architecture. When designing your venues, what kind of atmosphere do you aim to create for your guests that goes beyond just ice cream?


For us, every Lu Gelato branch is more than just a place to buy ice cream; it's a small experiential space. We want our guests to feel the brand through the colors, aromas, presentation, and atmosphere the moment they step inside. Our pastel tones, architectural details, window display, and product presentation all support the same feeling: creating a simple, elegant, refreshing, and enjoyable moment. Ice cream is a very cheerful product; we aim to combine this cheerfulness with a more refined, urban, and aesthetically pleasing atmosphere. We care about our guests remembering not just a taste, but a short but memorable time at Lu Gelato.


Besides ice cream, your menu also features specialty pastries and signature treats like Pate Frams. How do you blend Italian dessert culture with local tastes when designing your menu?


We draw inspiration from Italian dessert culture when creating our menu, but we balance it with local flavors. Gelato is our main character; however, we want to create a more holistic gastronomic experience with the specialty pastries, desserts, and coffee accompaniments we offer. Turkish consumers are very good at discerning intense aroma, freshness, and the true taste of ingredients. Therefore, in our recipes, we pay close attention not only to visual appeal but also to the balance of flavor. Specialty products like Pate Frams are part of this understanding; we combine classic pastry aesthetics with Lu Gelato's colorful, modern, and premium world.


You have locations in select locations in Turkey and Qatar. How do you observe the approach of premium consumers in different countries to gelato and dessert culture? How does your Qatar operation contribute to the brand's globalization vision?


There is a common point between the consumer profiles in Turkey and Qatar: in the premium segment, customers are no longer looking only at the taste of the product, but at the holistic experience of the brand. Presentation, service quality, store atmosphere, product variety, and the brand's positioning are evaluated as a whole. The Qatar operation gave us the opportunity to see how our brand is perceived on an international scale. Being present in different markets allows us to think more universally about our recipes, service standards, and brand language. This also contributes to Lu Gelato's positioning not just as a local flavor brand, but as a lifestyle brand with global potential.


Ice cream and gelato are often associated with the summer season. How does Lu Gelato break this perception with its wide product selection, aesthetically pleasing spaces, and coffee/dessert selection? What did you pay attention to in making the brand a meeting point that spans all four seasons?


Ice cream is naturally a product associated with summer; however, at Lu Gelato, we try to transform this perception into a broader experience. With our wide product selection, coffee and dessert alternatives, recipes that adapt to the season, and warm-atmosphere stores, we make the brand a meeting point that can be visited in all four seasons. While refreshing sorbets and fruity flavors take center stage in the summer, more intense chocolates, coffee accompaniments, special cakes, and dessert experiences gain importance in the winter months. For us, it's not just about selling ice cream; it's about offering a space where guests can create a small moment of pleasure for themselves in every season.


In recent years, premium consumers have shown increased interest in healthy eating, vegan alternatives, or organic ingredients. How do you consider these new-generation gastronomic trends and specific dietary preferences when shaping the Lu Gelato menu?


The new generation of consumers is now more critical of what they eat. This is a very valuable transformation for us because Lu Gelato's foundation is already built on good raw materials, authentic flavor, and a clean ingredient approach. Our menu includes vegan sorbets, sugar-free alternatives, and products made with seasonal fruits to meet this need. However, we pay particular attention to not compromising on taste while doing so. Our approach is not to make the product less enjoyable while offering a "healthy alternative"; on the contrary, it is to create a lighter, more natural, yet still powerful taste experience. We see special dietary preferences not as a temporary trend, but as a permanent part of gastronomy.

What excites us most is that Lu Gelato meets different people at each new branch and that the brand is increasingly embraced by a wider audience. Each location has its own spirit; this keeps the brand alive. The most challenging aspect is maintaining the same level of quality while growing. Because in a premium brand, taste, service, store atmosphere, team training, and product standards must be maintained with the same care at every point. For us, growth isn't just about increasing the number of branches; it's about delivering the Lu Gelato feeling consistently everywhere.


Are there any global brands, chefs, or concepts in the world of gastronomy and lifestyle that inspire and fuel Lu Gelato's vision?


Our inspiration isn't from a single brand or chef; it's more about well-designed, holistic experiences. The traditional gelato culture in Italy, the European understanding of patisseries and cafes, the aesthetic language of modern lifestyle brands, and Istanbul's dynamic gastronomic scene all contribute to our vision. When examining global brands, we look not only at their products but also at how they connect with customers, their store atmospheres, their storytelling, and their consistency. At Lu Gelato, this is our goal: to create a world of our own by combining strong recipes, aesthetic presentation, and warm hospitality.
