Where does the name “700Gr” come from? Is this name a measure or a manifesto for you?


The name 700Gr came about when we initially envisioned the place as a “bakery.” While experimenting with the grammages of the bread, this name was born and became very popular over time. Thus, it stuck as “700Gr”; fundamentally, it's a name derived from bread.


How does 700Gr create a space that stands against the fast pace of Istanbul?


We create a space that is not noisy, but rather intimate. We try to create an atmosphere where people feel comfortable.


The motto “Bread, fire, seasonality” sounds very poetic. What do these three words represent for you in daily operations?


This trio actually represents seasonality, respect for the product, and a living kitchen. For us, the kitchen is a constantly changing process that moves in harmony with nature.


How does spending 10 years in Moda transform a cafe? Did the neighborhood change you, or did you change the neighborhood?


Moda's unique culture has always been a defining factor for us. When designing the space, we wanted to contribute to this organic structure. In fact, we transformed each other; we changed together.


What feeling do you want people to experience when they first arrive at 700Gr?


We want to give the feeling of a place that isn't perfect, but one that's thoughtfully designed. This feeling makes people feel more comfortable. People can come here at any time of day; they can have breakfast or dinner.


Do you think what makes a place "Instagrammable" is aesthetics or atmosphere?


Atmosphere.


Which item on your menu do you say you "will never remove"?


The cream cheese and chive omelet. Because this goes back to the very beginning of our story. It's like the second part of our journey that started with bread. That's why it's so special to us; we've never considered removing it.


Do you think Istanbul's breakfast culture has become too "showy" in recent years?


Yes. We find an approach that appeals to taste and emotions more appropriate than overly full plates. Big and showy breakfasts aren't our style.


Do you think Moda is still a neighborhood for creative people?


Absolutely. Moda is a neighborhood that houses a lot of culture. From theater to cinema, from street artists to musicians, it's a vibrant production area, and it's constantly growing with this structure.


If you were to open a venue today, would you still do it with the same concept?


No. I have another venue called "Aralık" (December). When I opened 700Gr, I designed it with the goal of creating something even better. Each of my venues appeals to a different audience. I believe my third venue will be even better.


What is the "quiet but important" detail of 700Gr?


The fresh flowers. They change every week and silently complement the spirit of the place.


If 700Gr were to close one day, what would you want people to say about you?


I would want them to say, "We're glad it existed." For us, the most valuable thing would be for 700Gr to be remembered as an important place for people.
